The Role

The Italian Chef De Cuisine will be responsible to manage the overall Lombard Kitchen Operations, ensuring maximum guest satisfaction and highest standards of quality and consistency. The restaurant chef will play a pivotal role in menu development, kitchen management, and staff training, all while maintaining a focus on authentic Italian flavors and innovative presentations.

Key Responsibilities:

  • Oversee all aspects of kitchen operations, including food preparation, cooking, and presentation.

  • Develop and refine menus that showcase authentic Italian cuisine, utilizing seasonal and locally sourced ingredients

  • Ensure all dishes are prepared to the highest standards of quality, taste, and presentation.

  • Manage kitchen staff, including hiring, training, scheduling, and performance evaluations.

  • Maintain a clean, organized, and efficient kitchen environment, adhering to health and safety regulations.

  • Collaborate with restaurant management to plan special events, promotions, and seasonal menus.

  • Monitor inventory levels, order supplies, and manage food costs to meet budgetary goals.

  • Stay current with culinary trends and techniques to continually elevate the dining experience.

  • Ensure that the outlet food cost is efficiently managed to maximize profit while delivering on the brand promise.

Qualifications:

  • Proven experience as an Italian Chef de Cuisine or similar leadership role in a high-end restaurant.

  • Knowledge in menu engineering and costing.

  • Deep knowledge of traditional and modern Italian cuisine, with a passion for culinary excellence.

  • Strong leadership and management skills, with the ability to inspire and mentor kitchen staff.

  • Exceptional creativity and a keen eye for detail in food presentation.

  • Strong understanding of food safety and sanitation practices.
