FLSA Status: Salaried Exempt

ASM Global has an excellent and immediate opening for a Director of Food and Beverage at the Cabarrus Arena & Events Center. This position is responsible for daily management of the Food and Beverage Department to include concessions, mobile carts, general event catering, culinary, catering sales, menu development, financials, and budgets. The Director of Food & Beverage directs and coordinates the entire food and beverage operation by performing the following duties personally or through subordinate supervisors:

Major Responsibilities include the following. Other duties may be assigned.

  • Marketing food and beverage services to clients and establishing food and beverage controls

  • Fostering and maintaining positive client relationships

  • Daily management of Food & Beverage Department operations and personnel

  • Creating food and beverage sales projections and budgets for facility events

  • Sales, inventory, cost, and per capita reporting for each event and ongoing fiscal reporting

  • Purchasing and overseeing distribution of all products for concession outlets and catered events

  • Daily concession/catering food and beverage compliance and service concerns such as sanitation/health department regulations, alcoholic beverage service guidelines and standards, menu development, and detailed costing for menu items and events

  • Hiring and training new Food & Beverage Department employees; anticipating and scheduling labor needs for event and non-event days

  • Controlling spoilage and other costs of sales

  • Inspecting and tasting prepared food to maintain quality standards

  • Overall direction and coordination of the Food and Beverage Department. Carrying out supervisory responsibilities in accordance with ASM Global’s policies and applicable laws including interviewing, hiring and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees in conjunction with Human Resources; addressing complaints and resolving problems.

  • Working with limited supervision and interacting with all levels of staff and the public

  • Working flexible hours including nights, weekends, and holidays in addition to normal business hours

Qualifications

  • Certificate or degree from an accredited culinary school, college, or technical school preferred

  • Minimum of 5 years’ experience in a management-level position in Food and Beverage or equivalent combination of education and experience

  • Previous experience in overall Food & Beverage operations, sales, inventory control, cost control, and food preparation procedures

  • Previous experience in food purchasing and price negotiations

  • Excellent knowledge of current culinary and concession trends, presentation, and food quality

  • Previous experience in standardizing recipes, plating, and menu costing

  • ServSafe food and ServSafe alcohol certification

  • Alcohol awareness certificate and training capabilities

  • Strong orientation to customer service and ability to work with clients, guests, and staff members

  • Results oriented with the ability to meet required budgetary goals

  • Excellent organizational, multi-tasking, planning, written, and verbal communication skills

  • Attention to detail and service oriented

  • Prior supervisory experience required

  • Previous experience working with and overseeing subcontractors and vendors

  • Computer skills including proficiency with Microsoft Office programs

  • Ability to be creative with buffet presentations and maintain a quality product
