Position Title: Catering Manager Chase Center

Salary: 80,000-90,000

Job Summary

The Catering Manager creates all BEOS for private events, interfaces with clients to provide the best guest service, produces each event, and ensures successful event execution by the service staff.

ESSENTIAL FUNCTIONS

Client Interaction

· Field all private event inquiries

· Recommend menus to clients that best represent our culinary skills, proper quantities, and to ensure a great client experience

· Coordinate all F&B BEO construction keeping in mind client needs and budget

· Determine the flow of service for each event

· Determine the amount of staff needed for each event

· Attend regular events meetings with GSW

· Produce all event documentation and add notes for service staff to follow during execution of event

· Communicate with culinary any changes to BEOS in a timely, clear fashion

· Maintain client communication in the lead up to the event and post event

Event Day and Set Up Day Execution

· Confirm tables, linens, and power needs are addressed for each event

· Create staff assignments- assign staff to particular tasks and events based on seniority and business needs

· Lead line up, going over the daily event schedule, assignments, and event notes

· Oversee the timeliness and execution of each event, to ensure they are in accordance with BEOs

· Walk through space before event, ensuring buffets are set up to client standards, have all service items needed, and staff is prepared for service

· Oversee the breakdown of each space, the return of any rental or borrowed items, and the proper disposal of food and dirty dishes

Billing

· Responsible for all private client billing and ACH payments after event

· In charge of monthly end of month billing for GSW

· During every home game and concert, create premium inclusive bills determined by occupancy

Other Functions

· Manage all catering events and team members throughout service

· Manage monthly inventory

· Input monthly declining labor

· Hire and train new employees

· Track and monitor server’s hours per each event.

· Communicate on various levels to include management, associate level and clients.

· Generate BEOs for regular basketball season/playoffs.

· Submit tips for servers when working at bars

· Create signs and PID’s for regular and basketball season/playoffs

· Schedule catering staff for events based on event size and needs

· Submit schedule on mystaff

· Email availability form to all employees for their new shifts

· Send staff schedule -smartsheet

· Responsible for consistently implementing the service standards and operating procedure in the catering service.

· Manage each event waste logs

· Keep track/collect all temperature logs

· Input and correct/edit servers card time

· Enforce catering procedures to the team

· Work closely with GM and management to improve team performance.

· Maintain and charge all POS for bar sales.

· Work closely with catering chef’s during events

· Attend weekly BEO meetings

· Supervise/maintain pantry organization and cleanliness

· Requisition input and put away

· Managing end of events logistics

· Track and control last minute schedule changes

· Ensuring that last minute scheduling gets handled with HR and security guidelines. (Amy and mystaff gets updated)

· Ensure the catering pantry is stocked with product needs for weekly BEOs, and create Reqs with Purchasing as needed

MINIMUM QUALIFICATIONS

· Knowledge of food service/hospitality experience, including team management

· ServSafe Certification

· Proficient in computer skills
