Duties:
- Cooks and serves meals according to established recipes according to schedule.
- Assists the Food Services Coordinator in the planning of menus in compliance with mandated dietary guidelines.
- Prepares meals for special dietary, religious and/or medical needs.
- Operates a variety of kitchen equipment and appliances such as industrial ovens, mixers and fryers.
- Performs duties required to maintain a clean, safe and efficient kitchen operation.
- Estimates food requirements and controls serving portions to reduce waste.
- Ensures left over food and ingredients are appropriately stored for preservation.
- Completes daily set-up work in preparation for next meal; completes weekly prep list for her/his shift.
- Completes opening and closing daily records; records temperatures of freezers, coolers and foods on a daily basis.
- Trains residents and/or inmate workers to perform these responsibilities.
- Oversees the work of inmate workers as appropriate during meal set up, preparation, clean up, unloading and stocking inventory, etc.

Education and Experience:
- High school diploma or GED is required.
- Previous experience in commercial or institutional food preparation is preferred.
Special Requirements:
- Must possess and maintain a valid vehicle operator's license throughout the course of employment.
- Must pass a pre-employment physical, including a drug screen, as a condition of employment.
- Subject to background check and fingerprinting.
- Must be able to complete and pass the state required ServSafe guidelines test.
- May be subject to call-ins outside of normal scheduled work hours.

- Ability to establish and maintain harmonious working relationships with supervisors, co-workers and inmate workers.
